Choc Peppermint Protein Balls

Makes 10 Portions –

1/4 cup Almond Meal
1 cup Pitted Dates
2 tbsp Cacao Powder
1 tbsp Hemp Protein Powder
1 tsp Peppermint Extract
2 tbsp Desiccated Coconut (plus extra for coating)

Method

  1. Add dates into a blender and mix until they are chopped finely
  2. In a large bowl mix all ingredients together and stir with a wooden spoon until combined
  3. Add water to mixture if too dry
  4. Roll the mixture into balls and coat with coconut
  5. Place the protein balls into the fridge to set, will keep refrigerated for up to 5 days
